Highlights from the 2023 FAO Meeting on Cell-Based Food and Precision Fermentation

On November 6, 2023, a stakeholder roundtable convened in Shanghai, China, to delve into the latest advancements in cell-based food and precision fermentation.
This gathering aimed to gather insights and experiences from developers and producers in the field, facilitating the updating of food safety considerations and contributing to robust risk assessment procedures for competent authorities. Cell-based food pertains to products cultivated from isolated animal cells, while precision fermentation involves utilizing microorganisms to produce specific food compounds and ingredients.
Facilitated by the Food and Agriculture Organization of the United Nations (FAO) and the China National Center for Food Safety Risk Assessment (CFSA), the meeting featured 15 presenters who shared insights into their cell-based food or precision fermentation products, production processes and implemented strategies to ensure food safety.
